Recipe: Carrot, Pumpkin & Coconut Salad!



Ingredients - For 5 Servings:

Carrot - 400 grams
Pumpkin - 400 grams
Coconut - Half
*Usual Salad Servings Approx 200-300 grams/person.

Preparation:
  • Peel Carrot and Pumpkin. 
  • Grate Carrot, Pumpkin and Coconut
  • Mix it well and Serve in a Bowl with a Spoon
  • You can add Groundnuts, Chopped Coriander Leaves as Additional Topping
*No need to add any spices/salt/lemon/oil to the salad. This salad is Tasty in its Natural Form.

*Try different cuts/shapes/ graters to suit your taste buds and bring in variety to the taste.

Just because it has been a habit for quiet sometime :) We don't get fresh full carrots in our locality, mostly the top layer is spoiled, so developed a habit of removing the peels and cutting off the the spoiled part. If someone gets fresh, organic carrots they can use it without peeling it. Thanks for pointing it out :)
